Halloumi, not everybody loves this cheewy salty cheese, but I definetely do! This salty cheese works really well with fruit and the mint completes it.
Ingredients
- Halloumi (1 pack for 2 a 3 people)
- Couscous (approx 100 gr per person)
- 1 Pomegranate
- Mint
- Cucumber
- Lemon
- Olive oil
- Pepper & salt
Directions
- Boil water
- Put the couscous in a bowl and cover with boiled water. The water should just about cover the couscous.
- Get the seeds out of the pomegranate
- Cut (half) cucumber in little blocks
- Mix cucumber and pom seeds with the couscous
- Squeeze lemon on the mix, add some olive oil en pepper & salt
- Cut halloumi in slices
- Bake Halloumi on both sides (preferably in a grill pan) for a minute or 2
- Add (cut) mint to couscous mix
- Add baked halloumi to couscous
- Yam!
