Halloumi salad with pomegranate seeds

Halloumi, not everybody loves this cheewy salty cheese, but I definetely do! This salty cheese works really well with fruit and the mint completes it.

Ingredients

  • Halloumi (1 pack for 2 a 3 people)
  • Couscous (approx 100 gr per person)
  • 1 Pomegranate
  • Mint
  • Cucumber
  • Lemon
  • Olive oil
  • Pepper & salt

Directions

  1. Boil water
  2. Put the couscous in a bowl and cover with boiled water. The water should just about cover the couscous.
  3. Get the seeds out of the pomegranate
  4. Cut (half) cucumber in little blocks
  5. Mix cucumber and pom seeds with the couscous
  6. Squeeze lemon on the mix, add some olive oil en pepper & salt
  7. Cut halloumi in slices
  8. Bake Halloumi on both sides (preferably in a grill pan) for a minute or 2
  9. Add (cut) mint to couscous mix
  10. Add baked halloumi to couscous
  11. Yam!
