Fast fish dish from oven

When I crave fish, I tend to eat a lot of fat fish. Salmon, mackerel, sardines herring (since I am from the Netherlands and we love herring here). So today I wanted try something else and had a flashback to a dinner with the kids at my friend Rosa’s house. She made this easy dish with a white fish and lots of veggies from the oven. Very simple and everybody (including difficult kids) seemed to love it. Below my own version of that. You can use any vegetables you like, so also perfect if you want to ‘cook with what you have’ (cwwyh). Think green beans, spinach (also from freezer), carrot, sweet potatoe, paksoi, broccoli, cauliflower, etc etc, really anything will do.

Ingredients

  • White fish (I use cod fish)
  • Onion(s)
  • Mozzarella
  • Dill
  • Small potatoes or sweet potatoe
  • Green beans
  • Cherry tomatoes
  • Garlic
  • Pepper & salt

Directions

  1. Preheat the oven
  2. Boil water for potatoes and green beans. Then add the potatoes and either steam green beans on top or add them little later to the boiling water
  3. Dry the fish bit with kitchen towels
  4. Put mozzarella in colander or something that will take out some moist and cut the dill in pieces
  5. Cut onion in rings
  6. Put salt & pepper on the fish
  7. Add fish to an oven dish
  8. Put pieces of mozzarella on top of the fish and the onion rings on top of that.
  9. Squeeze some garlic on top and add the dill (1 or 2 cloves)
  10. Surround the fish with the potatoes, green beans, and cherry tomatoes
  11. Put the dish in the preheated oven for approx 20/25 minutes
