Salmon with grilled vegetables

This is a ‘always good’ dish. It takes approx 15 minutes and is full of good stuff. An excellent source of high-quality protein, vitamins and besides that wellknown for omega-3 fatty acids, which is, among other things, good for skin. Definitely a pretty, healthy, fast dish!

Ingredients

  • Salmon
  • Green aspergus
  • Red pepper
  • Red onion
  • Courgette (zucchini)
  • Parmesan (optional)

Marinade:

  • Lemon
  • Lemon zest
  • Olive oil
  • Garlic
  • Herbs (parsley)

Directions

  1. Preheat oven 180/200 degrees
  2. Prepare marinade, just toss everything together, but hold the parsley (you can also add it but you will get very dark parsley)
  3. Pour marinade over the salmon
  4. Put salmon in oven for approx 10-15 min (or longer depending how well cooked you like your salmon)
  5. Prepare/cut vegetables
  6. Grill vegetables in grill pan
  7. Last 5 min of salmon cooking, add the parsley
  8. Serve with slice of lemon and bit of parmesan over the vegetables
