Mexican veggie fajitas

When I first tried this dish, I was blown away, but seriously, the combination of these flavours just work! It is based on a Marley Spoon dish from back in the day. Just a little downside…, making salsa yourself is not ‘fast’, so not living up to my own quote on this one. You can always decide to use a prefab salsa, but yeah, choose a good one 🙂
This recipe just needs to be shared, so here it is!

Wraps & filling

  • Zucchini
  • Sweet potatoe (orange)
  • 1 big red onion
  • Garlic
  • Mini wraps
  • Feta cheese
  • Salt & pepper
  • 3 tbsp Olive oil
  • 1 ts Vinegar
  • Rucola
  • Mexican herbal mix: (smoked) paprika powder, cayenne pepper, chili powder, garlic powder, pepper, salt
  • Cilantro

Salsa

  • Cherry tomatoes
  • Red onion
  • Cilantro
  • Olive oil
  • Lime
  • Salt & pepper
  • Garlic

Directions

  1. Preheat the oven
  2. Wash the zucchini and seet potatoe and cut them in 1 cm thick strips
  3. Cut 1 clove of garlic in slices
  4. Cut onion in chunks and put 1/4 aside for the salsa
  5. Mix the vegetables onto a baking tray and top with olive oil, pinch of sugar, vinegar and the herbal mix. Mix all together.
  6. Oven for approx 20min
  7. For the salsa, fry tomatoes (1/4)onion and 2 cloves of garlic in a pan until golden brown
  8. Put all in high cup together with a handful of cilantro, 2 tbsp limejuice and a hint of olive oil and mix with or in blender
  9. Cut the feta into pieces
  10. Warm up the wraps in a pan
  11. Add some veggies, salsa, feta and rocket lettuce to a wrap and start eating!
