Banh Xeo

Banh Xeo (Sizzling Vietnamse Crepes)

Banh Xeo is a Vietname Coconut Crepe with Shrimp and Bean Sprouts (traditionally also with pork) and it is sooooo good. Xeo means sizzling, say no more… And you would think, it takes long to make, but it really doesn’t, it does help if you get the special Banh Xeo flower (see image)

Eat it by wrapping it with a lettuce leaf and stuffing herbs inside (Thai basil, Cilantro, mint leaves) and then dip in nuoc cham, a Vietnamese dipping sauce made of fish sauce, lime juice, and sugar.

Rice batter

  • Banh Xeo flower ( or regular flower )
  • Coconut milk
  • Water
  • Turmeric
  • Spring onions

Filling

  • Peeled shrimps
  • Mushrooms
  • Bean sprouts
  • Onion
  • Red chili
  • Vegetable oil
  • Mint
  • Cilantro
  • Lettuce

Nuoc Cham

  • 2 Tbs sugar
  • 4 tbs water
  • 3 tbs lime juice
  • 2 tbs fish sauce
  • 1 chili cut in rings
  • 1 clove garlic minced
